Vegetable Tajine Recipe

Ingredients

  • ¼ cup Virgin olive oil

  • 2 White onions, chopped
  • 8 Cloves Garlic, peeled & chopped
  • 2 Carrots, peeled & chopped
  • 2 Medium potatoes, peeled & chopped into chunks

  • 1 Tablespoon Harissa spice blend
  • 1 Teaspoon Ground coriander
  • 1 Teaspoon Cinnamon
  • ½ Teaspoon Tumeric
  • 1 Can Chickpeas
  • 1 Vegetable broth cube
  • 1 Lemon
  • 4 Sprigs Fresh parsley

Supplies

  • Knife
  • Chopping board
  • Large pot
  • Wooden spoon
  • Table Spoon
  • Teapoon

Directions

  1. In your pot, heat your olive oil over medium heat. Add the onions and sauté until translucent.
  2. Add all of your chopped vegetables, potatoes and garlic. Season with all the spices and a pinch of salt. Combine with a wooden spoon.
  3. Cook for around 5 minutes on medium to high heat, mixing regularly.
  4. Add the canned tomatoes and broth. Season again with a pinch of salt.
  5. Stir on high heat for 7-10 minutes, then reduce the heat and cover, leaving it to summer for another 15-20 minutes until the vegetables are tender.
  6. Stir in the chickpeas and cook for a further 5 minutes
  7. Add the lemon juice, fresh parsley and adjust the seasoning if you wish, adding more salt.
  8. When serving add a drizzle of olive oil
