Pad Thai Recipe

Ingredients

  • 250g Flat rice noodles
  • 3 Fresh spring onions
  • 2 Medium white onions
  • 2 to 3 Red chillis depending on how spicy you like it. 1 if you prefer mild!
  • 2 to 3 Tablespoons Peanut oil
  • 2 Cloves Garlic, finely chopped
  • 1 Tablespoon Rice wine
  • 3 Tablespoons Light soya sauce
  • 1 Freshly squeezed lime
  • 200g Bean sprouts
  • 2 to 3 Tablespoons Peanut oil
  • 1 Bunch Fresh coriander
  • A handful Peanuts, roughly chopped to garnish
  • 1 TablespoonSugar
  • Salt and pepper to taste

  • Chopping board
  • Large frying pan or wok
  • Bowl
  • Wooden spoon
  • Bowl
  • Tablespoon
  • Colander

Directions

  1. Prepare the noodles by placing them in a bowl of warm water for 30 minutes
  2. Prepare the vegetables. Chop the onion into small cubes and slice the spring onion. Finely chop your chillies. Use a garlic press of finely chop the garlic.
  3. Heat your wok or pan and add in the peanut oil. Add garlic, onions, spring onions and chillies. Stir fry for 1 to 2 minutes.
  4. Drain the noodles and discard the water. Then add the noodles into the stir fry.
  5. Stir in the soya sauce, rice wine, lime juice and sugar. Then season with salt and pepper.
  6. Add the bean sprouts last and stir fry for another minute.
  7. Serve immediately and top with the chopped peanuts and coriander.
